Sodium citrate is well known for its extensive use as an emulsifying salt in sliced processed cheese products. Sodium citrate also has applications as a phosphate substitute in household cleaning products and as buffering agent in combination with citric acid to provide pH control in foods and beverages. Sodium citrate also functions as a complexing agent for aluminum, calcium, iron, and magnesium.

Sodium Citrate Solution 31% FG (by weight) is a colorless to light yellow, aqueous dilution of Sodium Citrate FG which meets the requirements on the Food Chemical Codex on an anhydrous basis.
